Tonight is leftovers since I made 12 total enchiladas and i drive the carpool for boys and dd has soccer practice after school.
Tomorrow they both have soccer but I dont drive so will do soup (pre-made) and I bought frozen Garlic bread loaf that I will heat up with salad or carrots or peas. It was supposed to be enchiladas but I already used those last night. Thursday was the soup that will be Wed now and since dd has a game - ds practice, so it will be wraps or make your own dinner. I have plenty of food for people to figure it out.

Farmer's Market was open so we snagged 4 large spaghetti squash. Used 2 for dinner tonight with meat sauce. The remaining 2 will be Tuscan squash w/sausage & kale and a df cream sauce later in the week.

I made Chicken Satay Curry last night for dinner with Asian slaw and it was a BIG hit! No leftovers!
My kids all love Satay, but I was out of skewers, PLUS the last time I made satay, I skewered my thumb just under the nail. ( NOT my best move!) Secunda saw the curry recipe - pretty much satay in a bowl - and requested it for dinner instead.

Tonight we are having slow cooked butter chicken with rice. As its beginning to warm up here in Australia there won't be too many more times to use the slow cooker, so I'm using it while I can! I love putting it on in the morning and then forgetting about it all day

Fend for yourself night. I had leftover low carb cheeseburger soup, a salad topped with apple, feta cheese, and lime vinaigrette, and then I made a new recipe for dessert. It was low carb apple crisp, but made with zucchini rather than apples (although, I did add a little apple). It wasn't bad, but I don't think it really tasted very apple-y.

I need inspiration. We have so much squash. We've been eating veggie fajitas, potato and zucchini fritters, all the zucchini breads (garlic cheese, pineapple, chocolate, lemon)...and we still have so much left. I can't give it away fast enough.
