Tilapia sauteed with garlic powder, turmeric, paprika and bullion (knorr caldo de pollo) served with steamed veggies. Sooo good!

Dh got rotisserie chicken from Sam's Club, and then I made smoothies to go with it. I didn't feel like eating salad, even though I need to eat my veggies today, so I went with making smoothies. I put frozen fruit, greens, ground flax, collagen, a little bit of lemon juice and maple syrup, and almond milk in it.

I got the pork roast in the Crockpot a little late yesterday, and when it was clear it wasn't quite going to be ready in time for dinner, I made what turned out to be Cannelini Bean stew in the IP and cooked (turkey) Italian sausages and vidalia onions on the stove.

1/2 lb dried cannelini beans, soaked
1 14 oz can fire--roasted tomatoes
2c chicken homemade stock
1 onion, chopped
2 cloves garlic, minced
1/2 t rosemary
1/2 t thyme
salt and pepper
1 c frozen peas

Sweat the onion and garlic, add seasonings. Add everything else, lock on the lid and cook HIGH for 13 minutes. Natural release for 10-15 minutes and serve.

And there's Pork Carnitas for tonight all ready to go!

Its just dd and I tonight so was going to pick up Sushi and got 4 slices of pie from work to take home (today was surprise Pie Day from the PTO). But there is some Clydesdale horse event at the Kroger and no parking. So no bananas, no sushi.
I have frozen ginger shrimp potstickers and I will make fried rice with frozen veggies to go with it because now Im crazing an Asian cuisine.

Last night I made mushroom and blue cheese stuffed burger patties, oven fries and kale caesar salad. Tonight I'm working on gf pizza!

I was able to order grass fed beef roasts for a really good price through a local bulk buying company. It was pretty much the same price per pound as conventional beef on sale at the grocery store.

Anyhow, after I got home from picking them up, I put one of them in the crockpot with potatoes, carrots, celery, and mushrooms. I poured a bottle of Olive Garden dressing over the top. It should be ready soon.

We received a bag of cranberries in our weekly organic produce basket, and then 2 more bags of them in our holiday fruit box from the bulk buying company. Dh said, "Oh, you could make that cranberry apple crisp again!"

14 yo dd and I also just worked on making it -paleo, and no oats. It's in the oven. Looking forward to that!

Dinner lastc night was kielbasa sauteed with veggies (carrots, Brussels sprouts, cabbage and onion) with curry, served over a microwaved potato with melted sharp cheddar cheese.

Lunch today was the leftovers cooked with chopped tomato, spinach and scrambled egg, then I melted cheese over it and made it into burritos with avocado.

Me too. I have yet to do a green chili that has wowed my family. they all prefer either red or the sour cream one.
