we picked blueberries yesterday and we have eaten like 4 lbs already
i used a few in my smoothie this morning but was wondering if there was a raw blueberry muffin or blueberry cake recipe anywhere

i can't find one online although i haven't searched for that long.

sorry, I had to run into town for something really fast. Anyway, here ya go:

crust:
1 c dry pumpkin seeds
1 c dry almonds
3/4 tsp salt
4 Tbsp olive oil
1/2 c dates

pulse 1st 4 ingredients in food processor/blender until dough-like, then add dates until it becomes dough. cover the bottom of a pie dish w/this crust

syrup:
1 c blueberries
1/2 c dates
1/4 c water as needed
blend all ingredients into a thick syrup, adding water a little at a time until desired thickness

topping 1 1/2 c blueberries

pour syrup on crust, top with berries. willkeep for 2 days in fridge (HA, do you think it would last that long? Not in my house!)

Blueberry Cookies

2 cups Blueberries
2 cups Almonds (soaked overnight and blanched)
1 cup soaked raisins (small cup)
Blend till the crumby consistensy, use a spoon to spoon the batter out on a dehydrator plastic tray. Dehydrate for 24 hours or until dry (do not overdry) at the temperature of 105 F. Turn them over in 8-12 hours or when you see that one side is dry enough.

let us know how they turn out - and if you think it would work well using other fruits. I'm thinking cherries maybe. I have frozen blueberries, I wonder if that would work.

ya know what I am making tonight? lemon cookies. I am dehydrating them while we sleep so they will be ready for breakfast (Hey, they're healthy & raw, so who's gonna tell me no cookies for breakfast?!) Here's the recipe.
