Thanksgiving is coming. . . I need dressing help!
OK, so my mom has decided to make the dressing as vegan as she can , so that we can eat it this year. (Thanksgiving is at her house for the first time. . . um, ever? I guess.) I don't have the list of ingredients, but I know it starts with cornbread. I'm giving her my recipe, and we're going to use freshly-milled corn and wheat to make the cornbread, with soy milk and whatnot. (no eggs)
I know this recipe is a crock-pot recipe, and it does have eggs in it. Everone except me (b/c of Truman) eats eggs, so between now and Thanksgiving, I'm going to try eggs again, to see if he reacts or not. If he doesn't, then we can add the eggs. If he does, I'll need an egg replacer. I guess the "flax gel" stuff would work great. Right? It also has cream of chicken and cream of celery soup. It has one can of each, in a huge crock pot of dressing. Don't flame me, but I told my mom I could deal with one can of cream of celery soup. I can't get past the chicken though. :/ So is there another option? Any thoughts? It also has chicken broth in it. I've heard some people mention vegetarian "chicken" broth here before. Any idea where I could buy that? I have a recipe, but it calls for nutritional yeast flakes, and I don't have anywhere locally to purchase that. What do y'all think? |

Swansons makes veggie broth now. Have you checked that yet? Otherwise just make your own. It's really easy and you can make it in the crockpot and freeze it for later. I wouldn't use flax for the dressing. I'm thinking just omitting the eggs and adding a bit of extra moisture. Imagine makes cream soups, but I'm not sure if you have those.
Whatever you do try making it at home first. Otherwise there won't be any dressing for Thanksgiving.

I'm not vegan, but my family recipe for cornbread dressing might be easier to make vegan - no cream of soup and I know you can buy veggie broth - seen it at the grocery store right by the chicken. I'll give you our recipe, w/ changes that you could make:
1 pan cornbread (better if its a couple of days old) 7 or 8 biscuits or slices of dry bread crumbled 2-3 boiled eggs, chopped (it should be find to omit this - you hardly notice them) chopped celery, to taste (maybe 4-5 stalks) 1 chopped onion 5-6 cans chicken broth (use the veggie broth instead) 2 TBSP sage 2 TBSP poultry seasoning salt and pepper to taste mix all together in a big pan. if it looks dry add more broth. Let sit overnight then bake at 400 for 1-2 hours. I'm a little approximate on things b/c this is grandmas recipe and it's not actually written anywhere.
