Tonight we're having Italian Ravioli with Spinach, Artichokes, Capers, Sun-Dried Tomatoes, Baked Parmesan Zucchini Rounds and rosemary bread.

Tonight we're having this with homemade bread. It's very chilly outside and it smells wonderful.
Pasta Fagioli Soup that my kids absolutely love, is super easy, and is very economical. Easy to make gluten free by using GF pasta. Substitute a few extra cans of beans for the meat and it's vegan. I've used various types of broth, beans, and vegetables. I typically double the vegetables in all my recipes and I sometimes triple them. It all works. 2 lbs ground beef, browned and drained. 1 large onion, chopped 3 large carrots, sliced 4 stalks of celery, sliced 2 28 oz cans diced tomatoes, undrained 1 16 oz can dark kidney beans, drained and rinsed 1 16 oz can white kidney beans, drained and rinse 30 ounces broth (about 4 cups). May need extra if soup gets too thick. 1 heaping tablespoon dried oregano 2 tsp fresh black pepper 1 tsp hot pepper sauce, optional 1 20 ounce jar spaghetti sauce 8 ounces pasta salt to taste Into a slow cooker or soup pot, add all ingredients, except pasta. Slow cooker-- low 7-8 hours or high 4-5 hours. Soup pot-- cook until vegetables are tender, about 15-20 minutes. Add pasta the last few minutes of cooking, according to time indicated on package.
