Well dinner was leftover chili.
But wiggle worm decided that she would much rather eat the half a can of sardines that were left over from the three of us eating sardines on toast for lunch. When early bird isn't in eating mode we don't use two full cans. The last time we had sardines and she was in eating mode I only got one little lone sardine because early bird was eating them so fast, I think she ate a can and a half. It wasn't really a recipe . I just used OPA Feta Dill greek yogurt dressing, feta cheese, and tomatoes on butter lettuce. That dressing is SOOOOO good and so lite on calories! We love it.

This week on the menu is:
Falafals Shrimp stir fry baked fish, asparagus, fried rice Potato soup chili Thats only 5 things/dinners out of a 7 day week but dh will either cook (quesdillas or burritos, or soup from a can, or frozen burgers or veggie burgers wrapped in lettuce or pasta - he does easy things we always have on hand) or we will do leftovers. I make the pre-planned dinners but with going back to work and kids so busy I struggle to make it happen every night so dont even try anymore and dh does it the nights I find it a struggle).

Monday we had crispy gf pan fried shrimp, cheddar grits, asparagus, and kale caesar salad.
Tuesday - salmon patties, oven roasted broccoli and zucchini, Mediterranean pan roasted potatoes with olives and feta, arugula salad with lemon vinaigrette Wednesday- crockpot fajitas, rice, toppings (cheese, lettuce, olives, sour cream), homemade pico de gallo and guacamole

Tonight I just threw something together that we all loved. It was super easy because I started with store-bought soup (it was on sale)..
Pacific Organic Creamy Butternut Squash Soup, 4 cartons 4 large onions, chopped. 1 whole head of garlic, chopped or minced olive oil chicken breast, cooked and diced (optional, you could use any leftover protein) I sauteed the onions and garlic in olive oil until tender, then added everything else. My kids each ate 2 bowls, even my picky toddler. And they requested this be added to our winter menu rotation. I served it with homemade rye rolls (75% rye, 25% all-purpose flour). So good on a chilly winter night. |
