Chicken Cacciatore--I did it!
Wow! I just managed to modify a dish I ate with a recipe I read and came up with something I really like! Inventiveness and decisiveness are not my strengths.
Chicken Cacciatore (I did so much because I have a big crockpot. You could certainly do less.) One whole chicken cut into 8 pieces (I bought 2 halves and cut the rest myself, another hurdle crossed!) 2 zucchini, sliced & halved into chuncks 2 squash, same as above (I actually only had 1.5) 2 red/sweet peppers (or orange, yellow, or green ) 1 can diced tomatoes (mine was fire roasted w/ garlic, but just because I was out of plain) 2 small cans tomato sauce (or one and one of paste, diluted) sea salt to taste ground black pepper to taste Italian seasoning garlic chicken (or veggie) broth--one to two cups, ensuring the slow cooker is at least halfway full of liquid I had two layers of the chicken, so I seasoned each one before adding the veggies and cans on top. I put it on slow & set it for 6 hours, but it was done in 4. The chicken was falling off the bone. The "real" dish I had at Whole Foods was smothered in mushrooms, but Jimmy can't stand them. For all I know, Cacciatore stands for mushrooms, so feel free to add some, but you won't find it in my recipes.
