I know you said she doesn't like hummus, but would she eat straight chickpeas? My kids like a salad of chick peas/garbanzo beans dressed with olive oil, lemon juice, garlic, and parsley. Or you could toss a few into a pasta salad.

That sounds yummy! My friend does something similar with sweet potato, chick peas and salad leaves. And would she eat falafel? I'm not sure if that can be df though. What about some kind of bean salad?

My falafel is dairy free - chickpeas, herbage, and baking powder. Sometimes people add wheat flour, so it's not gluten free, though or fry it in peanut oil, which my kids can't do.
My kids also like roasted chickpeas - we buy them because I just can't get the texture right at home. They are super crispy and come in lots of different flavors, just like potato chips. That may be an option if you just need something to fill in.

She not been a Falafel fan in the past but I might test it again.
The pasta and chicken was a huge hit and while she was really ready for dinner when I picked her up she said the pasta filled her so that one is a keeper. I bought some crunchy chick peas as well so I'll see if she likes those. She is off till Monday so we get a little break. I might experiment with some of these suggestions though over the weekend to see what she might be willing to try.

This week we did
Monday nutbutter and jam sandwich Protein bar Apples Carrots Tuesday DF cheese gf crackers Hard boiled egg Olives and tomatoes Strawberries Wednesday Nutbutter and banana sandwich Pretzels gf Apples and oranges slices Cucumber slices Thursday Brown rice with grilled chicken Broccoli and cherry tomatoes Olives unsweetened Applesauce pouch Annie gf chocolate chip granola bar These seem to fill her and she likes. I noticed she wasn't drinking much the first week despite heavy workout classes. This week I purposely snuck it a bit of some salty stuff like olives or a few pretzels to hopefully encourage her to drink more water.. It worked she is now bringing almost empty water bottles home. She is performing this weekend for the local schools back to school rodeo. She is actually doing it with a younger class ( just them and the big girls) but they needed a few filled spots and she still little enough she can pass for a first grader lol. One more week of the intensive. She is loving it.

Ive gotten kind of lazy and have been going for stuff I can quickly put together but its her finial week...
Monday Breakfast GF oatmeal and peanut butter toast Lunch packed PB and J (sunbutter) blueberries tomatoes and carrots Kind bar She said good but not enough Tuesday Breakfast scrambled eggs and bacon Packed lunch PB and J blueberries tomatoes hard boiled egg cashews kind bar was happy said enough for lunch but was really ready for dinner Tomorrow Breakfast Soy vanilla yogurt with granola and blueberries and sausage Lunch GF crackers dairy free sliced cheese and salami black olives cucumber slices hard boiled egg apple sauce pouch mix almonds and cashews fruit leather We shall see..... this used to be what she'd eat in like an entire month LOL

How long does this go on? I quickly discovered the time my girls have done camps that some.how puting together lunches is so much harder for me than making lunch at noon time.
