Mini-Muffins that Freeze Well
I am looking for tiny muffins (gems) that I can make up in big batches and freeze for my kids' dessert. Mixes and so forth are OK; I can swap them out if they contain things Eva can't eat. The fancier the muffins are, the better, because I plan to have Eva swap them for Halloween candy next year. (Eva can't tolerate any soy product or standard food coloring and guess what's in every candy she got this year!)

I use a recipe from Deceptively Delicious that freezes well. It's the peanut butter and banana muffins.
