Just me and the girls last night we have yogurt parfaits. It's a favorite when it's just us. They feel like they are getting dessert for dinner.
Homemade yogurt and granola made a blueberry compote and added sliced fresh strawberries

We had Chili-Lime Air Fryer Salmon with Avocado Mango Salsa and coconut rice.

I made a one pot stove top pasta dish.

Ground meat and onions and garlic, tomato sauce, spices. I stirred in water and mini shells and cooked until done. Then I stirred in a bunch of mozzarella and parmesan.

I made a huge batch of Taco Pasta last night with a side salad and we ate it then, some kids for breakfast, some kids for lunch, then all of us for supper tonight.

It’s taco meat, noodles cooked in with extra water after the meat is cooked. Add beans and corn. Add sour cream and cheese. Cilantro or green onions to garnish. Easy and always a hit!
