October Main Meals - Page 3

Mondays are our busy days. I leave the house with my 2nd oldest for speech therapy 45 minutes away before the other three even get home. So I eat and feed my dd before we leave, and then either leave food in the fridge or plan something easy to prepare for the rest of the family (we are in the midst of piano lessons when we come home).

So tonight was oven roasted chicken and veggies for dh and I. Hot dogs and bbq chips and grapes for the kids.

Easy. Convenient. And the kids get excited when I let them have chips and hot dogs since it's a rare treat in our house.

Take out pizza tonight, which honestly I could eat at least 3x/week (but I truly only get it about once every other month because I try to cook most nights). But I love pizza

. Two appointments, soccer and youth group tonight necessitated it!

tortellini in a cream sauce, with zucchini rounds topped with parmesan. Raw sliced veggies.

It went over even better than I anticipated.

We have appointments so close to dinner on Mondays that I don't have time to cook. We usually get some cheap take out pizzas but we've had so much pizza lately that we got tacos instead.

spaghetti sauce with half noodles and half zucchini noodles. And either baked zucchini or broccoli as an extra veggies.

Feeling the need for all sorts of comfort foods, spaghetti is not going to satisfy me at all but after 2 nights of eating what I wanted, lamb stew that he didn't really like, I let G pick tonight.

It's DD's birthday and she picked a local restaurant for her birthday dinner. So I'm not cooking tonight!

I made chicken & mozzarella ravioli with a browned butter/balsamic/pecan sauce, and a Bacon Caesar salad.

I made two big quiches yesterday; chicken, bacon & vegies, plus one had homemade ricotta in it - that one is all for me! I loaded them up with so much vegies that they're complete meals, we're having the leftovers tonight

Being in the southern hemisphere, it's Spring here & we're starting to look for cooler meals again, I always find this half of the year harder than autumn/winter, because DH isn't crazy about salad, but I don't want to eat a hot meal every night, and I'm not into preparing/cooking two separate meals, especially in the hot weather!

I made pioneer woman's chicken tortilla soup yesterday. I was not crazy about it. Once I added a bunch more seasonings to it it was edible but I'm feeding the left over to hubby and ds

Last night we had crockpot pork roast and potatoes. The. My husband sautéed green beans.

Tonight we are having burgers and homemade applesauce. Son wants fries but I really do not want to make them.
