Re: October Main Meals
Great minds think alike!
As I was doing my morning run in the damp drizzle, and thinking about dinner plans, I realized that the only appropriate meal to make for my sniffling itchy throated family members is chicken soup. Fortunately I had a whole chicken thawing in the fridge as I was thinking about doing a roasted chicken for tomorrow's dinner. But a quick throw in the crock pot with water and seasoning will turn it into our fave delicious healing soup.

Re: October Main Meals
Yesterday I made some TexMex bowls. I melted Mexican blend cheese with sour cream and heavy cream to make a sauce, then added precooked fajita chicken and rice. I put that at the bottom of our bowls, then topped them with romaine, tomatoes, and red onion. Turned out really good!

Re: October Main Meals
We're having potato leek soup with sausage, roasted broccoli, and a fresh baguette from a local bakery. The kids have been devouring the broccoli so I keep making it.

Re: October Main Meals
Pulled pork on a bun. I finally got around to trying the recipe that was posted in the beginning of the month. Here's the recipe again: http://www.100daysofrealfood.com/201...e-67/#comments
I think I'll make a quick coleslaw to go with the bunwiches.

Re: October Main Meals
Tonight I made huge spinach veggie salads with chicken for dh and I. Tried a homemade italien salad dressing recipe for the first time. It was pretty good.
Then I made shepherd's pie and steamed carrots for the kids. Side of fresh grapes.

I cleaned out the freezer/fridge last night: smoked turkey, stuffing from last Christmas , and sweet potato fries. Plus some sauteed zucchini for me and a side salad for DH. Tonight we get to have a catered dinner at a grown-up party while a friend feeds our kids! Friends celebrating their 30th anniversary and their daughters are throwing a huge party. Should be super fun.
