Pork chops in GF portabella gravy, probably Brussels sprouts and broccoli on the side
Saute 1 lb chopped pork chops in olive oil in a cast iron skillet (I season with salt, pepper, and onion powder). While they're cooking, make two packets of GF gravy mix according to package directions (I add onion powder). When the pork chops are done, add them to the gravy and let it simmer. Saute 1 lb sliced baby bella mushrooms in butter in the skillet. Add to gravy. Simmer until the pork is tender. Cook Brussels sprouts in the microwave until desired tenderness. Saute in butter in a cast iron skillet until lightly browned.

Tilapia, winter blend veggies (broccoli and cauliflower), and grits. I was going to eat instant mashed potatoes but I didn't realize the ones I bought had possible wheat cross contamination
