Fish recipe - wild caught salmon fillets. Smear with canned coconut milk. Cover that with a mixture of shredded coconut, curry powder and salt. Bake for 20-25 minutes. Serve over coconut rice. I use the remaining coconut milk and water to make the rice.

Marinara and Italian meatballs over grits, Greek salad (I ended up making kale caesar salad last night instead of Greek salad since the kale was already starting to wilt).

Yesterday we did shrimp and grits with roasted bell peppers on the side.
today was instant pot chicken and potatoes with basil pesto and parmesan. Tomato and cucumber salad on the side.

Tonight was chicken fajita bowls and salad. DH is going out of town so I won't be cooking for the rest of the week! I love cooking, but not just for myself.

Last night was pan seared chicken thighs, veggie quinoa, and roasted brussel sprouts and cauliflower.

Last night we had chicken thighs sauteed with potato cubes and onion soup mix. Also, steamed broccoli, cauliflower, carrots and Brussels sprouts. The sauce was drizzled on the veg, along with the potatoes then crumbled queso fresco and a slice of Swiss cheese. Then I melted the cheese in the microwave.

Life got busy yesterday so we just did sandwiches of choice with chips..
