I received some bone-in chicken thighs from a local store. I remembered them being kind of tough, so I googled a marinade. This was amazing!
Citrus-Marinated Chicken Thighs (I skipped the zest and used pre-made OJ) DH was asking for NE cole slaw, so I made this: http://www.pressherald.com/2011/07/0...yo_2011-07-06/ I made a marinated salad and some sauteed spinach to go with it.

We should be in the 90's in another hour or so, same thing for tomorrow. There is no way I'm turning on my oven! We're having muffalettas tonight (planning enough so we can have leftovers tomorrow for lunch) and I'm making cheesy chicken for nachos in the crockpot tomorrow night. Tuesday is looking like it will be the same weather-wise, so I've go to figure out another meal that doesn't use the oven.
