You can eat too much raw kale because of oxilic acid.
Currently my daily lunch is shredded kale and carrot salad with chopped grilled chicken and Italian vinaigrette. I also really like a kale and goat cheese salad with walnuts green apple carrots cranberries and a fruity viniagrette dressing. I do not like it in my smoothies it doesn't blend down as well as spinach in my little blender. The other night I rough chopped some toss d with evoo and minced garlic put on a sheet pan next to some chick n sausages and roasted it up. I like the little crunch it gets without it becoming kale chips. |

I regularly freeze kale. Wash, remove the stems, then thinly slice. If you wait until after the first frost to harvest, kale tastes sweeter. I think freezing store-bought kale makes it sweeter, too.

Bacon, egg and kale omelette or scrambles.
Bacon, kale and beans. Basically anything else with enough bacon and butter.... Frozen then tossed into a smoothie. Frozen then blended and tossed into cheesecake for a St. Patrick's day treat. If you use enough maple syrup your kids might fall for it like mine did last year. No there is no such thing as too much kale! |
