Want a new chicken recipe?
About 20 years ago my mom wrote a chicken cookbook that she thought might be world famous
It's called, and I'm serious...Ummmmm Good! "Chicken." with quotation marks Anyway I thought it might be fun to post a recipe for everyone who posts in the thread. Maybe you've heard of it before, maybe not! Who wants to play? |

For Loralee Potato Chipped Chicken Casserole 1 onion (chopped) 4 C chopped cooked chicken 4 C celery (chopped) 1.5 C mayo 3 T. lemon juice Mix all together--put in 9x12 baking dish. Add 2 C shredded cheddar cheese, 4 C crushed potato chips, and 1 C sliced almonds. Bake at 350 for 25-30 minutes. Wow. |

I totally pulled the most obnoxious non-veggie convertible recipe I could out of the hat
Chicken Divan (also can use with turkey, April) 2 T butter 2T flour 1 1/4 C milk 1 egg yolk, beaten 1/4 t. dry mustard salt and pepper 1/4 c grated cheddar cheese 2 pkgs frozen broccoli cooked and drained (no wonder I hate veggies...sigh) 3 C sliced cooked chicken Melt butter, add flour and cook until mixture bubbles. Remove from heat. Graduatlly stir in milk and egg yolk, then add spices. Cook, stirring until mixture is thickened and starts to boil. Add cheese and cook, stirring until cheese is melted. Arrange hot broccoli and chicken in baking dish, spooning sauce between layers and on top. Sprinkle with Parmesan cheese. Broil until cheese is browned. ---------- Post added at 05:57 PM ---------- Previous post was at 05:52 PM ---------- Chicken and spinach noodles 4 whole breasts, halved and skinned 8 oz spinach noodles 3/4 C cooked peas 6 oz sliced mushrooms 1 4 oz jar sliced pimento drained 2 egg yolks 1 C skim milk 1/2 C parmesan cheese salt and pepper Place chicken and 1 C water in saucepan, cover and cook until tender. Drain and remove chicken from bone. Cut chicken into strips and set aside. Bring 3 Q water to boil, stir in noodles, and boil 10 minutes. Drain pasta and return to pot. In a separate dish, combine chicken, peas, mushrooms, and pimento. Beat egg yolks and milk with a fork until foamy. Gradually add this mixture to noodles, stirring well, and cook over medium heat about 5 minutes or until thickened. Toss with chicken/other ingredients and top with parmesan cheese. Remove skin and trim the fat from chicken. In a bowl, combine the remaining ingredients. Place chicken in a casserole dish and pour the mixture over the chicken. Bake at 350, basting often, for 60 minutes or until the chicken is tender and sauce has thickened. Serve over rice. Serves 6. (Calories per serving 195) Don't ask me why this one has calories |

I'll take a recipe that is allergen-free (no corn, soy, wheat, eggs, dairy, nuts, etc.), made from scratch, is super-easy and my husband won't say that it's "boring."
Oh, and no pepper - forgot about that one.
