Last night I made this for the kids (chicken, broccoli and pasta skillet): http://www.galonamission.com/chicken...let-casserole/ I even made my own from scratch cream of chicken soup (she gives the link in the link) for the first time and was impressed at how SUPER easy it was. I'm still determining the final menu for tonight. I baked two loaves of naturally sweetened (honey) whole wheat banana bread which is a fave of my kids. They will have that for dessert (and probably after school snack). My goal is to fill them up as completely and fully as possible with good for them food before they go trick or treating, so that we hopefully minimize the amount of crap they ask to eat.

Tonight we're staying in and having a little family Halloween party, so I made my dad's delicious layered taco dip. He always made it for special occasions so I get rather nostalgic about it. Can't wait to eat it this evening!

I'm currently eating tomato basil pasta. I'm not really enjoying it. I hate whole wheat pasta & I didn't have onions so used dried flakes. Not the same. oh well at least it's filling

I actually love green beans steamed - you just have to add fat and salt. Love tossing them in bacon grease and garlic salt! Or I've got a recipe where you steam them, then toss them in a vinaigrette and bake them (it's called Green Beans Caesar - topped with parm and breadcrumbs). But the roasting sounds interesting. How long and at what temp?
It feels like a grilled-cheese-and-tomato-soup kind of night here.

Homemade mac and cheese. When you've made it eleventy grillion times, it really is pretty fast. Served with microwaved frozen veggies. Halloween candy for dessert, of course!
