Butternut squash soup with odd texture
Well, my oldest dd is coming home from college tonight and requested curried butternut squash soup. I was disappointed to find we were out of coconut milk, which is always what I use. SO, I subbed unsweetened flaked coconut. The taste of the soup is fantastic, but the texture is odd. My cheapo immersion blender just won't get those coconut flakes any smaller.
Hope the family doesn't think it's too weird when they have to chew their soup!

sounds like something I would do. When did you make it? It might get better after an overnight soak in the fridge to soften the coconut shreds.
