Do you think a banana would be a good egg replacement in brownies?
my friends' birthday is this weekend, and she's vegan and gluten free. I have a gluten free brownie mix, which calls for an egg. I have one ripe banana. Do you think it would taste ok?

I have used applesauce in gluten-free chocolate cupcakes for the egg and they came out fine. I'd think banana would be fine too, and I don't think 1/2 a banana in a pan of brownies would alter the taste too much. Not to mention, I like chocolate and banana anyway!

I'd personally use apple sauce as it has a milder flavor.
