Maedchen Rose Trellis Join Date: Feb 2012 Posts: 2,482	Re: Making Do My nephew and his wife just got back with me for more information they are finding with using the Agua faba from chick peas: The liquid from a can of chickpeas will behave like egg whites in nearly every baking application. You can even whip them just like egg whites for an angel cake or meringues. Many online sources recommend 3 Tbsp aquafaba for 1 egg white and 4 for a whole egg. Personal experimentation has proven 3 Tbsp aquafaba and 1 tsp flaxseed (mix and let sit a few minutes) works more like an egg. The aquafaba provides lift like egg whites and the flaxseed helps bind like the egg yolk.
