I am willing to try anything. We love baked beans but just can't buy that canned stuff anymore. The ingredient lists can be quite scary! |

Do you have a slow-cooker? I have a great slow-cooker one
It came from Fresh From The Vegetarian Slow Cooker book which is an AMAZING book. Maple Baked Beans 1 tbsp olive oil 1 medium yellow onion 2 cans navy beans, drained and rinsed or 3 cups booked navy beans 1/2 cup pure maple syrup 1 tsp dry mustard 1/2 tsp salt 1/2 tsp freshly ground black pepper 1/4 cup tomato paste disolved in 1 1/4 cups hot water Cook onion in olive oil in a pan for about 5 minutes. Put in slow cooker. Add beans, syrup, mustard, salt and pepper. Mix. Cover with tomato paste mixture. Cook on low for 6-8 hours (I aim for closer to 8) Serves 4 hungry people. You can easily double this for potlucks or to freeze for another day. It's simple and yummy everytime.

This is what I tried last month and posted. My same recipe, just no bacon. I also did mine in a slow cooker. |
