Fettuccine Alfredo with side roasted brussel sprouts. It was supposed to be roasted asparagus but I didn't get any asparagus at the grocery store.

I make fast enchiladas which is why I'm making it tonight since I don't have much time to cook and eat between our church stuff.

12 corn tortillas
Cheddar cheese block cut into 12 sticks that are around the length of the corn tortillas
1 can chopped green chilies
2 cans enchilada sauce
Shredded cheddar
Sliced black olives

I warm four tortillas at a time on my griddle and then roll cheese sticks and a spoonful of chilies inside each and place in pan that has a little enchilada sauce (about half of one can) in the bottom. Then I do four more and then four more. Pour rest of enchilada sauce evenly on top. Sprinkle with olives and shredded cheese and bake about 20 minutes in a preheated 425 degree oven until bubbly.

So i didn't pan fry anything, but i microwaved a big stack of tortillas and rolled them with black beans and cheese. You inspired me to go beyond my lazy enchisana

I have a new Thai-mushroom soup and new chicken dumpling soup on the menu for tonight. But dc have been eating a normal amount for active teens rather than the amount they normally eat which is consistent with ravenous monsters so have leftovers (made 2 9 inch pans of enchiladas and 2 boxes of pasta).

I am thinking of making just 1 soup tonight and freezing most of it. And the other soup tomorrow night and freezing most of it. I got out of the habit of making ahead and freezing.

I think the chicken dumpling soup tonight because ds likes leftovers the least and he can have that soup with some enchilada or pasta. Then he is gone tomorrow night so the rest of us can have the mushroom soup as a sit down meal.

Organic hot dogs on buns will fillings tonight. I have one shoulder in a sling so am limited for cooking for the nest little while.

Tomorrow will be meatballs and spaghetti

Soup.
Ill make chicken and dumpling for ds and us to have before he leaves to hang out with a friend for his bday.
Then Ill make the Thai-mushroom for us to have with dd when she gets home from track.
Its soup, I figure dh and I can do 2 smaller bowls with each.

Last night was gf biscuits and gravy - oh how I've missed you!!!!!

Tonight I'm planning Mongolian beef over rice with a stir fry of zucchini and the first asparagus from my garden.
