Default how do you free your pot pies?

I cook my potpies by cooking all the filling completely on the stove top and then fill the pie shells and bake them....

I want to freeze them...How should I do that? Before I bake them or after? Cooking the filling on the stove top has to be done either way, Im just not sure if I should freeze with the pie crust raw or cooked.

I freeze just the insides and then put them into a pie shell when I want to bake it. However, when I do it that way, I am also buying my pie crust at Trader Joes... or even *gasp* Pillsbury... so that takes away any work.

I freeze the filling in a baggie and then freeze the shell that is going to be used with them, if I have it. I do not make my own crust, though.

I freeze the cooked filling in a freezer bag, then take it out to thaw on the day I'm planning to use it (along with my store-bought pie shell ).

Im cracking up this morning at my title typo! Hahaha!!


I use store bought pie shells half the time too...I thought about freezing the filling separate from the shell...Maybe I'll try one raw and one separate. I'm hoping to make the defrosting and cooking as easy as possible.

Sometimes I make one from scratch...yeah, I know that defeats the purpose of a frozen shell...

And the other day I just used frozen philo dough for the top. I don't separate the sheets, just lay them on in on big thick layer with earth butter on top.

You can also use mashed potatoes for a lid, ala Shepherd's Pie.
