Re: October Meals
I have a gig tonight so there's Cheesy Chicken in the Crockpot. I'll steam some broccoli before I leave.

Re: October Meals
What's the recipe for the cheesy chicken? I like quick and easy (and cheesy is always a bonus!)

Re: October Meals
Quote:
2-2.5 lbs chicken breast 1/2 c. chicken broth 2 (8 oz) blocks cream cheese 1.5 t Cajun seasoning 1t onion powder 1/2-3/4 t smoked paprika sometimes garlic 4hrs in the Crockpot, low or high, it doesn't seem to matter in my pot. It's usually cooked through in about 3 hours, so I shred the chicken and let it absorb more flavor for the last hour. The original recipe says to blend the sauce ingredients in the blender and pour that over the chicken, but I've gotten lazy lately and just dump it all in at once. Turns out just fine after a stir. I use the Tony Chachere's Cajun seasoning that has salt in it. If you have the salt-free variety, add a pinch of salt to taste. You can also replace up to 1/3 of the cream cheese with Greek yogurt. Any more that that and the sauce separates and gets watery. Feel free to play around with the seasonings. Up to about 1T of dried herbs/spices works in lots of different combinations. We've made this with our homemade Ranch seasoning (1T), Herbs de Provence (2 t +salt), Buffalo Hot Sauce (replace some of the cream cheese w/butter), even adding spinach and basil/thyme (yogurt option).

Re: October Meals
Pork Carnitas and slaw.
I hope The Vultures left enough tortillas for dinner tonight. I really don't want to go to the grocery store.

Re: October Meals
This is the Greek salad I made last night: Maroulosalata. I was skeptical that it was going to be good, but it was amazing!
Tonight is homemade pizza.

Re: October Meals
Dh is at Costco. I asked him to pick up tortillas/chips because we have leftover pork carnitas, cheesy chicken, and taco beef. Add some salad veggies and the kids will be happy with that.
We have a couple of pear trees in the yard that are producing the largest, sweetest pears we've had in probably 15 years. I made a pear crisp this afternoon. That may be my dinner.
