Re: October Main Meals
It's not really a recipe. I sautee a lot of onions in butter. Add boneless chicken and a bottle of good beer. Simmer until chicken is cooked. Then I thicken it with a roux made from butter and oat flour. I add salt and granulated garlic somewhere along the way and I often add other vegetables in with the beer.

Re: October Main Meals
We had giant salads last night, which was so what my body needed. I can't even remember the last time I had a good salad.
Tonight is zucchini lasagna leftovers.

Re: October Main Meals
I really don't want to make what I planned. Instead I'm going to make chicken, risotto and green beans.

Roasted turkey, creamy spinach & cabbage, teff, and apple pie for dessert. I finally found affordable granny smith apples.

We had fries topped with lots of chili seasoned ground beef and cheese. Tomatoes on the side. I can't wait to feel well enough to cook regular food

Re: October Main Meals
Chicken fajitas, rice and beans. Salad, possible apple pie for dessert.
And all these comments of chili are really getting me in the mood for that. Thawing some ground beef for tomorrow!

Re: October Main Meals
My husband and son are at a football game, probably eating hot dogs. The girls and I did a mall run to spend some birthday $$, and rushed home to have quick soft tacos/taco salad. Was SO glad I pulled some chicken breasts out to thaw, so it was really fast.

Re: October Main Meals
I made pulled pork for the first time ever, in the slow cooker! It was tricky to find a recipe that suited our various dietary requirements, and the contents of our pantry, but I found one, and it was amazing! The sauce was a little spicy so I kept some meat aside for DD1, but the rest we mixed back in for ourselves, over rice, with steamed veg on the side. So good. And leftovers for another night
