Say you're making chicken noodle soup...
...and you have to use chicken breasts instead of a whole chicken. What would you do to add in some extra flavor since you'd be missing the more flavorful dark meat?

As well, if it was only just breasts and no skin/bones, I'd probably saute the breasts in garlic, butter and rosemary before adding to the soup for some extra zip. |

I was thinking that I would bake the chicken first to darken the skin, but Kristin's suggestion of sauteeing with garlic sounds great. I might also add a dash of Maggie or a similar flavour enhancer (Bragg's liquid aminos or bouillon). Onions, celery and carrots added to the soup would bring in some more flavour. ...and salt, lots of salt! with a dash of pepper. Oh yeah, another idea instead of adding a bouillon type flavouring is to add a bit of star anise.

Ok, my soup turned out SO good!!!!!!!!!!!
Novel Mama, in case it helps your research, here's what I did: 3 tablespoons of butter and 2tsp of olive oil in a large sauce pan (soup pot) 1tsp dried rosemary, crushed 1/2 tsp dried basil 1 tablespoon chopped garlic (from a jar) Celery, carrots and onion (mirepoix mix http://en.wikipedia.org/wiki/Mirepoix_(cuisine)) I sauteed those all together until the veggies were soft. I shredded 4 cooked chicken breasts (previously roasted) and added it. I didn't have any stock or broth, so I used 5 kosher chicken broth cubes (telma brand) and one veggie cube (also telma brand/kosher) and 7 cups of water. Otherwise I would have used 7 cups of chicken stock Salt and pepper 1 bay leaf (optional) The last few minutes I decided to make a whole meal out of it so I threw in two more cups of water and a box of barilla elbow pasta... it's kind of twisty and has ridges so it's pretty cute in there. I just let that boil in the soup for 7 minutes or so till it was perfect. The kids are declaring that it's the best chicken noodle soup they've ever eaten. That all sounds good. I have done stock with just breasts before. Can't eat dark meat right now.
