We had breakfast for dinner last night: spinach and leek quiche with puff-pastry crust (which is THE best way to make quiche!) and blueberry muffins.
Tonight...I have no idea. I'm really trying to clean out my pantry and freezer this month.

I've got spanakopita in a bundt pan in the oven. I'm not sure what to make to go with it. Maybe turkey meatballs? Cauliflower something?

Sweet and tangy BBQ beef, Brussels sprouts. I'm not adding the rice, but might eat it on GF bread. I like eating it with coleslaw, but I didn't feel like making it.
SWEET AND TANGY BBQ BEEF 1 lb ground beef 1 medium bell pepper, chopped 2 medium onions, chopped 1/2 c. olive oil 2 c. cooked rice (optional) 1/4 c. liquid from jar of dill pickles 3/4 c. BBQ sauce Salt and pepper to taste Brown ground beef, bell pepper, and onions in oil. Combine with rest of ingredients. *Pickle liquid and BBQ sauce are both salty, so be sure to taste before you add salt!

I made bread this afternoon, so we had rolls to go with the cheesy chicken from the crockpot and steamed veggies. Boring, but the kids liked it. (Although two of them ate an awful lot of bread and jam.)
