Yesterday and today we had chicken enchilada soup. It was super yummy. Of course I had to make changes. I added one cup uncooked basmati rice and some sliced mini bell peppers.

Burgers with homemade gluten free buns (not delicious, before anyone asks for a recipe I'll have to try another...but I have a great bun pan!), hot crash potatoes with cheese, and green salad.

Not a dinner but I just made pioneer woman's chicken tortilla soup (with a couple of tweaks) and it was yummy! Kind of involved prepwise for a soup though
