I made this frosting from a Better Homes and Garden's magazine this spring. It was delicious! Though the recipe's not vegan, maybe you could make some substitutions and make it work.

Found it, I'm going to type it out here real quick.
Vegan German Chocolate Cake (mostly fat-free) Batter: 3/4 cup pitted prunes 1/2 cup water 2 TBS powdered egg replacer 1/2 cup water 2 cups sugar 2 cups unbleached flour 3/4 cup cocoa powder 2 tsp baking powder 1/2 tsp salt 1 cup soymilk 2 tsp white vinegar Preheat oven to 350. In food processor or blender, chop prunes. With motor running, add water. Puree, stopping to scrape the sides, until mixture resembles a smooth paste, about 5 minutes. Transfer to bowl of mixer. In a separate bowl, combine Egg Replacer with water, mixing with shisk until smooth. Add to prune puree in mixer bowl, mixing at medium speed until smooth and fluffy. While beating, gradually add sugar. Beat until light and fluffy. In separate bowl, sift together flour, cocoa baking soda, baking powder and salt. In small bowl, combine soymilk and vinegar. Stir to mix. Let sit a few minutes until thickened. Add flour-cocoa mixture to prune-sugar mixture alternately with soymilk, beating constantly until batter is light and fluffy. Scrape botom of bowl several times. DIvide batter among three 9-inch non-stick cake pans. Bake until cake springs back when touched in center and wooden pick inserted comes out clean, about 30 minutes. Remove from oven and place pans on cooling racks. Run spatula carefully around edge. Let cake cool in pans until room temperature, about 20 minutes. Frosting: 1 1/2 cups almond milk (I use soy) 1 1/2 cups sugar 1 1/2 tsp vanilla 5 TB cornstarch mixed with 1/4 cup water to form smooth paste 2 cups flaked coconut 1 1/2 cups chopped pecans In saucepan, mix together almond milk, sugar and vanilla. Cook over medium heat stirring constantly until sugar dissolves and mixture is hot. Add cornstarch past in thin stream, stirring constantly until mixture thickens. Remove from heat. Stir in coconut and pecans. Stir to cool. Have fun with it. We eat it every year or DS1's birthday and it's a hit and a surprise to all who taste it. Jen D.

Raw Strawberry Pie The Joy of Vegan Baking By Colleen Patrick-Goudreau It is best when served within an hour or two of preparing it, since it is at its most fresh then, but it holds up just fine in the fridge. Preparation Time: 20 minutes Chilling Time: 1 hour Servings: 8-12 Crust: 2 cups raw almonds or pecans 3/4 cup pitted dates, preferably Medjool Filling: 5 cups sliced ripe strawberries 5 pitted dates, soaked 10 minutes in warm water and drained 2 teaspoons fresh lemon juice Place the nuts in a food processor and grind until they’re a coarse meal. Add the 3/4 cup of dates (for the crust) and process until thoroughly combined. Press the mixture into a non-stick or very lightly oiled pie plate or spring form pan. Arrange 4 cups of the sliced strawberries on top of the crust and set aside. In a food processor or blender, combine the remaining 1 cup of strawberries with the 5 soaked dates and lemon juice. Puree until smooth. Pour the sauce mixture over strawberries. Refrigerate the pie for 1 hour before serving. This will help the pie set and will be perfect for slicing. |
