Re: December Meals
DH did the cooking last night and tonight, which I was very grateful for - lasagne last night (from scratch - well, not the pasta), and curry tonight (curry paste from a jar, but still tasty!). I think I’m doing a chicken traybake tomorrow.

Dh is gone tonight so we're having Breakfast for Dinner - waffles, bacon, and hash browns.

Re: December Meals
QUICK VENT (skip to the end if you just want to know what I made): I made a grocery list and dh was going to go grocery shopping for me yesterday day (he works from home). He didn't get everything on the list bc he was talking to his mom and chicken breasts were $2.74/lb and she said oh they are $1.99 lb at Meijer so he didn't get any as well as some other items. Fair enough - except this is the man who buys a $6 coffee on his way to a soccer game. Skip your next fancy coffee and get the chicken I need for dinner. . .I was also missing pita bread for the falafals and beef for the pasta. I only planned 3 easy meals this week bc we r busy and ds and dh leave Thur for a tourney. And dd and I are easy and we don't need meat for meals. But I was short an ingredient for each meal . . . So dh ran out and went to Meijer and got the chicken and the beef (both were indeed on sale for a good price) and the pita breads while I made the falafal balls. So I guess I am not mad at him afterall. Ok . . . except . . .but what really bugs me and those of you who followed along with allllllll the MIL drama over the years. . . what his mom says is golden, ya know? ... I hang onto the fact that 1. She loves my family that i love and she is a great Grandmother to my kids. and 2. After my dads passing Im come to appreciate that our time together is limited so try and not get annoyed and let dh enjoy his mom while she is here. Ok, NOW I'm really not mad at him anymore. I feel better.
Congrats if you made it through that nonsense and if not - no worries - short story: I did falafals last night for dinner.

Re: December Meals
Thanks, 2+2!! You just made my day - I laughed out loud.
I have to go grocery shopping this afternoon so nothing is set in stone, but Secunda asked for Asian Beef lettuce wraps tonight. We haven't had those in a while, so .... good choice.

Re: December Meals
Gluten free biscuits and sausage gravy and raspberries. Cup 4 cup was subbed for my usual 1 to 1 gluten free flour in my grocery order. Oh my word, where have you been all my life?! Cup 4 cup makes way better biscuits (and pizza crust for that matter) than the brand I’ve been using forever.
And yes, I’m still on a comfort food kick which doesn’t seem to be easing up in the near future.

Yes, here it is. They are so easy to make. I see now that the recipe actually recommends Cup4Cup brand flour.

Re: December Meals
Cup 4 Cup has a higher starch content. It's perfect for any recipe that normally uses cake flour. I couldn't get it at my local grocery store so I made a knock-off and used that to make cream puffs and ladyfingers with excellent results! It didn't work as well in yeast bread, though.
I'm working a bunch this week (!!) so we're doing lots of quick or crock pot meals. Yesterday I made Bao buns in the IP to accompany a beef stir-fry. Tonight I'm coming home late, and plan to put Chicken Chili on the IP before I leave.

Monday: Crock pot sausage and peppers with yeast rolls
Tuesday- Korean sweet lentils over rice with fried eggs Wednesday- Cauliflower crust pizza with Green Peppers, Mushrooms, artichoke and Black Olives (thanks to DD1 and her 1/2 off workers discount) Thursday- Beef and Quinoa Enchilada Skillet I followed a recipe I hadn't done before tasted really good but it was way too soupy. I'd do it again but would adjust the recipe to address this.
