Super easy! Cut an "x" in the bottom of the peach, and dip them in scalding water for about 30 seconds to a minute. The skins will come right off. Then slice them up and follow the steps in the canning recipe book (the standard Bell one that's for sale everywhere works fine).

I canned two boxes of peaches last year and have one lonely jar left. I used 1/2 sugar, 1/2 honey to make a light syrup and they are soooo yummy. After the peaches are gone from the jar, I add a bottle of Perrier to the left over syrup and it's the most decadent soda ever. Mmmmmm....

i'll try it. we'll see how many i come back with. i only have about $20 to spend.

I have to admit, I do find canning peaches (by myself) very time consuming. It might not be so bad with another adult and/or someone to watch the kids, though.
It's not hard, it just takes a while & is a bit sticky.

For cucumber sandwiches, we do the same as a toasted tomato sandwich, so no dairy. Toast, mayo, cuke slices & lotsa salt and pepper! Yummy!

i am going to pick up some cream cheese today and experiement with sliced cukes and cream cheese.

no peach farm after all due to rain.

Well, I figured you could do GF bread (I have a homemade one that actually tastes good--but it's full of eggs). And I guess mayo is out if you're egg-free, too!

And when you do go to the peach place, eat one for me! And let the juice drip off your elbows...or at least your wrists!!

it's okay sundance, i've given up on actual bread. i've found a few boxed mixes that work (we are also potato and soy free) for pancakes, muffins/cupcakes, and pizza crust, and a recipe for almond flour cinnamon rolls. but any storebought rolls/bread i've found was awful

and i've yet to attempt my own from scratch.
