We had Chicken Lazone last night with braised rainbow chard and a salad bar.

Monday was IP night. I had a Mississippi Pot Roast waiting for us when we got home in one IP, mashed potatoes in another, and glazed baby carrots finished up on the stove while the kids set the table.

Last night was grilled sausages and peppers over rice with a yummy salad on the side with butter lettuce, spinach, pecans, blue cheese, and dried cherries.


Tonight I'm planning oven fried chicken with mashed potatoes and cream gravy and corn.

How do you do Mashed Potatoes in the IP? Do you just cook the potatoes in there and then dump the water and add the rest of the stuff?

Sunday was Asian Peanut Slaw and pork and noodles with peanut sauce.
Monday was sloppy joes, roasted sweet potatoes, and raw peppers and carrots.
Tuesday was chicken and rice
Tonight is slow cooker quinoa chili
Tomorrow is some kind of turkey and vegetable skillet and sourdough bread
Friday is pizza
Saturday is greek chicken bowls.
I am hoping for takeout on Sunday!!

Yep. I steam them in a basket, then dump the water and melt butter in the still-hot pot. Add the potatoes and mash, then add cream cheese and seasonings. (Milk only if needed.) They hold for another 20-30 minutes or so in the turned off pot with the top on.

Same procedure if you want to make them in the Crockpot.

We had Eggroll in a Bowl for dinner tonight.
