DH put a pork butt in the smoker an hour ago. I am already ready for dinner and its not even 9am.
I'll probably make some biscuits and I'm not sure what else. I'm always stumped on sides for pulled pork. I like casual but nothing quite seems to fit. DH wants to stop at Target to get some cole slaw (its the best grocery brand, according to him ). I like microwave homemade potato chips but they are labor intensive. Sometimes we do loaded smashed potatoes. I don't know, uninspired. Any good ideas?

I'm thinking sausage and blueberry pancakes for supper... Unless I have to bring DH back to the ER with his kidney stone. Lunch was roasted red bell pepper alfredo with turkey.

It is kids eat free night at the mexican place. My grandma took us out to thank my DH for helping her with paperwork and so I did not have to cook. I had spinach-tomato enchiladas with whole beans and rice .

We had pork tenderloin, roasted with rosemary and garlic, butternut agnolotti with pesto, and green beans.

Ordered pizza last night. I had plans to make chicken sesame noodles but I didn't feel well and had no motivation. So I wimped out.
Tonight I have dinner plans, so I'll leave something easy with DH. I usually do sloppy joes & tater tots those nights because I don't like that and they all do but that would require me going to the store, I think. So maybe tacos.
