Chick Pea Chow Mein - so delicious

1/4 c. butter or oil
2 sm. onions, chopped
1 c. mushrooms, sliced
3 c. prepared chick peas (or canned--drained and rinsed)
2 c. celery, cut in sm. pieces
3 c. chicken flavored broth
2 tbsp. brown sugar or maple syrup
1/4 c. soy sauce or tamari
3 tbsp. cornstarch
1/3 c. cold water
Melt butter/oil in large pan. Add onions and mushrooms. Brown slightly. Add chick peas, broth, sugar and soy sauce. Simmer until onions are slightly done. Blend the cornstarch in water and add to chicken mixture. Cook until thickened and clear.
Serve over hot Chow Mein noodles, rice, barley or quinoa.

We (Luke and I) had this tonight while everyone else had chicken chow mein.

We had it over barley or quinoa

It was so so so good

I can't wait to have the leftovers for lunch tomorrow
