Vegan baking?

Okay, this is the most difficult part of being vegan. I am having such difficulty finding vegan baking recipes that both taste good and cook well. Most of them I've tried are so sugary, or they end up being messy blobs. Anyone have any good recipes? Or, can you recommend a good cookbook? My little guy has a nut allergy, so that does limit us.

I just use shortening or Canola oil to replace butter and 1 teaspoon of water and 1 teaspoon of oil to replace an egg.

What are you looking for?

I like recipes from Vegan with a Vengance. Almost every dessert I make is from there. I just linked to some outstanding oatmeal cookies in the egg thread above.

There are good tried and true recipes in this forum.

Another good place is vegweb.

I just use regular recipes and substitue soy or rice milk and EnerG's Egg Replacer

It always comes out great

I use Earth Balance, soy milk, and then for eggs I use this:
1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder
