Spinach and Sun-Dried Tomato Pasta
This was so good I was out of the spinach, and it still turned out great!

That sounds wonderful, Amanda..thanks for sharing that. I have the pasta, tomato and spinach.. I'm going to have to try this one! I have some roasted red peppers that I bet would be good in there as well.

Ooh, that would be good! I had something similar at Noodles and Co, so I was on the hunt for a recipe I didn't add any cheese so that it'd be safe for my ds, but I'm sure it'd be good with it on there. The one at Noodles had feta on it.

I tried this last night because Amanda always posts good recipies
It was really good! I left out the pine nuts because they are expensive, and I added feta cheese, parsley and lots of black olives. We also used the sun-dried tomatoes packed in oil because my husband couldn't find the dehydrated ones. Hmm. I guess I made a completely different meal, come to think of it Anyhow, it was yummy and I'm going to serve it to company tonight.

We used the ones packed in oil too, but I still let them simmer in the broth to give it a tomato-y flavor
