what's a good way to use up a few lbs of carrots? has to be dairy/wheat/egg free

Carrot/ginger soup...if you can have cashews then grind some up with a little water for paste and it will make a deliciously creamy soup. If no nuts, then use soymilk. Just cut up, simmer until they're cooked, mash a bit (but not too much or it's babyfood, lol!), add a little fresh ginger or candied ginger or ginger dried spice, thicken with cashew paste/soymilk and you're done! I do it in the crockpot.

carrot salad: just shred the carrots and add some Veganaisse and raisins
soup:steam them until they are soft. Puree and add a can of coconut milk, a can of veggie broth and some curry paste or powder. Put in spaghetti sauce Juice?

or dip them in this: 1/2 cup walnuts 3 new potatoes, quartered and boiled 1/2 cup lemon/lime juice 1/4 cup olive oil 3 chopped cloves of garlic, raw salt/pepper to taste fresh oregano and parsley to taste Blend in electric blender, pulsing just until smooth...if you over-blend, it'll be a little too sticky. |

apparently, you can cut them into strips and toss with olive oil, back at 400 for about 25 mintues and have carrot fries! I haven't tried it yet, but have a recipe. I want to do this though.

well, sice I am not cooking unless I have to I think I will try carrot fries tomorrow. Today we ate carrot sticks w/hummus, and ds ate them with half a jar of peanut butter!

I slice them really thin, about the length of my pointer finger and about as thin as a pencil and sautee them in butter, olive oil, canola oil, somethign like that and then at the very end I add a tablespoon of brown sugar and a dash of ginger to the pan and make a glaze ( really thin almost the consistency of vinegarette dressing) and toss the carrots in it. The kids love them. I also cut carrot coins for the kids (my kids are older than yours I think) and sprinkle with dry ranch dressing ( comes in a packet. I put some in a salt and pepper shaker) and they eat it plain like that. I use that ranch dressing seasoning for lots of veggies, pastas and such. That way I get all the flavor, no dairy and less calories.
