Peanut Butter Brownies - Help me veganize this recipe please?
These brownies are DH's favourites and I love them too. They are very rich and very bad for you, so we only make them as an occasional treat anyway. But I am slowly trying to transition our family to vegan, so I'd love to be able to veganize this recipe, without losing the fabulous flavour and dense chewy moist brownie goodness!
Sorry all the measurements are metric - I'm an Aussie! 180g butter (haven't tried it in this recipe yet, but I do know of a great vegan "butter" spread) 150 dark eating chocolate (already use vegan chocolate) 1¾ cups caster sugar 4 eggs (this is where I need help!) 1 teaspoon vanilla essence ¾ cup plain flour 2 tablespoons self-raising flour 1/3 cup cocoa powder 50g dark eating chocolate, extra 1/3 cup crunchy peanut butter Any ideas/suggestions would be greatly appreciated. Oh, and if anyone wants to try the recipe, let me know and I'll post the directions too. |

I often substitute oil for butter, adding a little less than it calls for so they aren't oily. It usually works out great. For the eggs, you can try 1T. of soy flour blended with 2 T. of water for each egg. I used to do that all the time in cookie recipes until I found out that my ds shouldn't have soy. HTH!

Grease 20cm x 30cm lamington pan (just a shallow pan); line base and two opposite sides with baking paper. Melt butter and chocolate in medium saucepan over low heat. Stir, without boiling, until mixture is smooth. Cool slightly. Stir in sugar, egg and vanilla, then sifted flours, cocoa and extra chocolate. Pour mixture into prepared pan. Drop small spoonfuls of peanut butter into the mixture and swirl through with a knife. Bake in moderately slow oven about 50 minutes (I always find it takes longer, up to 20 minutes longer usually) or until firm. Cool in pan, cut into 24 pieces... or less if you like them big and chunky like we do. |

Can you get powdered egg replacer?
Here's a great article about baking and egg replacement. http://www.theppk.com/veganbaking.html You may have to try a few times, but you will get the right one!
