Recipe for new mom?
Hi. A mom in our homeschool group had her baby lastweekend. We are all delivering meals for the next week or so. The family is mostly vegetarian so I need some ideas of what to bring. They have a 6yo & 3 y/o and newborn. Any suggestions? They do eat some turkey and fish. All of my usual new baby in the family recipes are out. Thanks!

My last new baby meal that I brought someone was chicken pot pie. I would think you could just leave out the meat and add lots more veggies like potatoes and carrots and peas, maybe mushrooms or something?

Soup! I make a yummy crockpot soup, based on a recipe I found in "The Passionate Vegetarian" by Crescent Dragonwagon. Place the following in crockpot: 3 cups of lentils/split peas/beans etc of your choice (I usually use a mix of all these), 2 cups vegetable stock, 3-4 cups of fresh chopped vegies of your choice, or a large bag of frozen vegies, ½-1 cup of "something tomatoey" eg. diced tomatoes, pasta sauce, salsa etc. Stir well, fill with boiling water to cover, then cook on high for 3-4+ hrs till done. Very easy and so many possibilities. Depending on the vegies and legumes you choose, this can turn out rather thick like a stew, which is also delicious.
