Gluten Free Orange Tofu (GF and Vegan)
I was really craving orange chicken. I was so tempted to just pick up a pack of orange chicken from the freezer. But, I told myself I could make it. I did!! I was out of egg replacer or I would have tried that.
One lb of firm tofu that has drained and press out the water mix together brown rice flour 1 egg water I did not measure this, but it was probably about a cup of water. I would suggest trying a half a cup first though. Just heat the oil and coat one piece and drop it in the hot oil. If it puffs up a bit then you have the right consistency. You want the batter to be really thin like crepe or tempura batter. Would be really nice if you had some sparkling water, too. Fry all the battered tofu and let drain on a paper towel. Fry some fresh chopped garlic (I used two cloves). Then add a bag of veggie mix. I used one with brocolli, onions, red pepper, green beans and I think that was it. Then pour the sauce stuff on. Sauce: orange juice concentrate tamari (or whatever wheat-free soy sauce) brown sugar or favorite sweetener (you have to use this) Once the sauce taste right you can add some cornstarch slurry. Serve on brown rice and enjoy. I wish I had made more because it was really good the next day cold.
