My vegan burrito I had for dinner. . .
Hey so I made this rice stuff from "Simply Vegan":
Cook 1.5 cups brown basmati rice (one of the yummiest food products in the world) in 3cups of water for around an hour When it's almost done, start a frying pan with a little bit of oil, and fry half an onion till it's starting to brown. Add a little more oil if that onion soaked it all up, and stir in two teaspoons of curry powder - more if you want it spicy. Fry that around for a sec to get the "raw" taste out of the curry powder, then add one package of firm or xtra firm tofu, cubed. Get your tofu all covered in the curry-ed oil. Fry that around for a couple minutes till the tofu is cooked (you can't really tell when it's browning cuz it's all orange from the curry powder ) but it'll start to smell really good!! By now your rice should be all the way done, so you add that to your fry pan and "incorporate" it into the curry tofu stuff. THEN I put that into a tortilla, (I make my own) but I spose you could put it in pita, or chapatti, or just on a plate! Yum Yum!! Simple, cheap, and tasty! My only three prerequisites for food!
