What would you use in this recipe?

I don't have any flax seed yet, or Ener-G. I was thinking of doing the 1/4 mashed potatoes. It needs to be binding, there is yeast in the recipe so I didn't want to do the baking soda. Or would extra oil and water do the trick? Oh, and we don't have any applesauce or bananas now either, I plan on buying some egg replacer powder, and flax seeds to grind myself. But right now we're outa bread, LOL, and I don't want to go to the store today because the kiddos are sick/teething. TIA for any input. ETA: I am looking for a good egg replacer for this recipe, LOL |

Honestly if you don't have more than 3 of the ingredients the chances that the recipe will work is slim.

I just realized I didn't ask what I was looking for, LOL. I want to veganize this recipe, so I'm looking for a good option for an egg replacer, LOL.

I would give the mashed potatoes and 2 tablespoons of extra oil a try. I think bread is pretty resilient. Are you making it in the bread machine because it's a lot easier to judge if your bread is going to work if you do it by hand.
If we are out of bread I make biscuits. They are quick and they make good sandwiches. How about Outrageously Easy Big Bread?
