Vegan Salads (Grain, Green, Fruit doesn't matter!)
I thought we could share some salads.
My Aunt started making this and it's so good I finally stole the recipe from her. It's not really a recipe because it's too taste. It sounds strange, but it's so very good. Couscous (I love this stuff it cooks fast, but it's wheat. I think you could replace it with millet maybe. Any suggestions for gf would be appreciated!) lemon juice (bottled is fine) cinnamon (lots!) sliced green onion (whites and greens) raisins cilantro Cook up a big batch of couscous and drizzle the lemon juice all over. You can drizzle with some olive oil, but it really doesn't need it. Add some onions and raisins. Then start sprinkling with cinnamon. There should be enough so that you see it when you are done. Does that make sense? You will have to play around with it to get it right. But, it should be lemony tasting with bites of sweet and oniony. If you like cilantro then add some freshly chopped cilantro at the end and over the top. Taco Salad
Here is a salad my Step-sister makes. She says it's something they used to eat a lot when my Step-Dad (her Dad) used to be a Vegetarian. (We didn't know him then and I really wish he would go back to being a Vegetarian. It would drive my mom nuts!) Spiced Tortilla chips crushed up into bite size pieces (She used Doritos, but I know I have seen some organic spiced ones somewhere.) Your favorite green lettuce (I like a mix of red leaf, green leaf, iceberg, cabbage and thin slices of kale) Shredded cheese if you are vegetarian Red Kidney beans (rinsed and drained) I like a can of red kidneys and a can of black beans, too. green onions catalina dressing or your favorite dressing (I haven't made this forever. I don't know if Catalina is Vegan, but I bet you could veganize it easily) Mix together and top with avocado and lives if you like! I like to make something similar to this. But, omit the turmeric, mustard, carrot, onion, salt and pepper. I guess it's not that similar. They you add grapes that have been cut in half and granny smith apple chunks. Let it sit overnight. It's really good on it's own or stuffed in a pita.

Here is another dump recipe
package of thin pasta (can be spaghetti, g/f spaghetti, soba noodles etc.) Boil this up and mix with the following while still hot! Sesame oil, cinnamon, green onions, sesame seeds. This is so good! You will dump in a lot more cinnamon than you would ever think possible. It sounded so gross to me when I found out what was in it. But, it's soooooooo good. It's a great filling salad to take to a potluck and you don't have to worry about it going bad in the heat. It's good to eat with chopsticks! I usually sprinkle extra onions and sesame seeds on the top. You can serve with some Braggs or Tamari if you want. I don't think it needs it, but my dh likes it.
