Going Veggie- Help!
Ok, so DH is STILL complaining about the money I spent for our share of a CSA. :/ He thinks it will all go to waste. So, to prove that it will all be eaten (and for health reasons) I plan to go veggie. Its for the best really.... I will feel better and be healthier.
So, I don't plan to eliminate dairy or eggs. I DO plan to eliminate meats. But, here's the dilemma. I am hypoglycemic. I have trouble maintaining blood sugars without adequate amounts of protein. How do I get enough protein in? Beans just don't do it for me. I love to eat them.... they just don't last like other protiens and mu sugars crash within 2 hours. Any advice here?? Thanks, Cindy

I eat eggs - no dairy at the moment. I don't eat meat.
I make sure I get protein in one form or another at every meal *eggs *hemp protein powder (only powder I've found with one ingredient - hemp *sunflower seeds (handful or sprinkled on a salad) *trail mix (homemade - cashews, raisens, pumpkin seeds is our latest) YOu could also have *cheese *cottage cheese I also have a VERY yummy vegan dehydrated "cookie" and date bars. My husband thinks they are more like "granola chews." YOu can make them in the oven if you need to. They are TREMENDOUSLY high in protein. I'll find the recipe and post it

I was thinking of changing to almond milk if I find its cheaper. It's a little lower in protein. I also recently posted my favorite smoothie recipe here somewhere - but I don't know where so here it is. Breakfast smoothie 1 to 2 C liquid (oat milk or o.j. are my fav) 1 serving hemp powder 1 serving greens powder 1 banana 1/2 C frozen fruit of some sort I am VERY concerned about my protein level because the last time I was veggie, I ended up protein starved. I know it can be done (eating enough protein) but I wasn't doing it properly so this time I am REALLY careful. I have been trying to get 3 to 6 servings of protein because my body just needs it. Another that popped into mind nut butters on ww toast (peanut butter, almond butter, cashew butter).
