Re: I need some vegetarian PASTA DISH recipes, please~
itll eventually get a stale taste, but it takes a *long* time and helps if you put it in an airtight container instead of leaving in the box

Do you cook the veggies for a pasta salad, or throw them in raw? |

Greek Salad is really good. Whatever noodles you choose, a package of feta cheese, black olives, cherry tomatoes cut in half, cucumber slices, and Greek salad dressing.

yum Lexi...that sounds awesome!
we love pesto on our cold pasta salads. I usually throw in carrots/peas and any other veggies we have on hand. We tend to at least blanch our veggies. |

My MIL made pasta premadora tonight it was sooo good. It is onions chopped and sauteed, then tomatoes and basil olive marinara sauce. This doesnt have meat at all in the marinara type sauce. Anyway then you use wheat pasta or whatever pasta you have and there ya go. It is basically spaghetti without the meat.

We make a lot of pasta dishes. I use this killer recipe for homemade bread sticks (you can easily whole-wheatify it, lol), and it makes for a great meal! I melt some Earth Balance and garlic (or even garlic salt, lol) and brush it on the bread sticks. Its perfect.
Some of our favorite pastas:

Mushroom stroganoff is good and easy, too. Just saute the mushrooms, onion, and some garlic. Add a bit of flour or arrowroot. Then whisk in something milky and unsweetened like coconut milk, soymilk, almond milk or creamer. Add some parsley or spinach for a little color and pour on pasta.

Re: I need some vegetarian PASTA DISH recipes, please~
a couple of these have meat in them, but you can omit the meat for a still very yummy pasta dish. Sorry if the text is a little weird. These are taken out of my cookbook program on my computer :
RECIPE: artichoke pasta CATEGORIES: Breads/Grains/Pastas INGREDIENTS: 1 jar artichoke hearts, undrained pasta 2 pnt heavy cream 3/4 cup white wine 1 handful sundried tomatoes , chopped METHOD: combine one undrained can of artichoke hearts, wine, garlic if you like it, cream and tomatoes into saucepan (I use a skillet b/c more surface area gets covered and it cooks faster) and cook down until nice and creamy. Add salt to taste. serve over pasta of choice - we like tortellini ==================== ==================== RECIPE: lemon pesto shrimp pasta CATEGORIES: Breads/Grains/Pastas INGREDIENTS: 1 pkg knorr creamy pesto sauce 1 1/2 cups milk 2 tbsp lemon juice 2 tbsp olive oil 1/2 lb frozen shrimp pasta of choice METHOD: heat olive oil and cook shrimp until pink. Add milk, packet of pesto sauce and lemon juice and simmer until thickened (3-5 minutes). Serve over pasta of choice. ======================================== RECIPE: Lemon Pepper Chicken Pasta SOURCE: Liz CATEGORIES: Poultry, Breads/Grains/Pastas INGREDIENTS: 2 chicken breasts 1 cup white wine, divided 2 cloves garlic, minced 1/2 stick butter 1 lrg lemon mushrooms, optional 2 pnt heavy whipping cream parmesan cheese METHOD: Take your chicken and put in a skillet with a little olive oil or butter, add enough white wine to have the chicken simmer in. Add a little garlic and lemon juice too. In a separate saucepan, melt butter - about a 1/2 stick should do. Add a couple teaspoons garlic and sliced mushrooms (optional). Saute until the excess water from the mushrooms cooks off and the mushrooms get a nice brown color. Squeeze a lot of lemon juice and add a 1/2 cup of white wine. Cook down until most of the liquid is gone. Add 2 small containers or 1 medium container heavy whipping cream. Cook on high. Ad salt and pepper. Boil until more than half of the liquid has cooked off. Add strained chicken. Turn heat of and let set and thicken. About 5-7 minutes. Add parmesan cheese after sauce has cooled some. Add pasta to sauce.
