Roasted chicken leg quarters (I was wrong they weren't thighs ), sweet potatoes cooked in unfiltered apple cider and spices (for the fam), and roasted green beans.

A variation on Zuppa Toscana with Dunkelwurst sausage and purple mustard greens and red skin potatoes for the family... and a turkey burger with Havarti cheese and 1/2 roasted acorn squash for me.

A happily easy night! School meeting for the littles and the school's catering local BBQ, so the plan is for that to be dinner for family... and then I will have a leftover chicken thigh from Tues and the leftover squash from last night, maybe with some browned butter wilted spinach.

Lemon chilli chicken, which is kind of like a curry but more citrus-y with roast potatoes. For veggies I did tenderstem brocolli, and sauteed Brussel sprouts with garlic and bacon, because they were in the reduced section at Tesco

We had hamburgers (with avocado, tomato, and grilled onion) and a grilled corn salad (sadly, it still feels like summer here). I need to put hamburgers on my menu more often because everyone loves them, including me!
Tonight I'm making a Fig Balsamic Pork Tenderloin and balsamic/bacon shaved Brussels sprouts (recipe is on the back of the Trader Joe's package of the sprouts)....pretending it's fall, haha.

The family had bratwursts, apple cheddar jalapeno risotto (I pulled some out for Peanut before stirring in the cheese), and green beans. I had lamb sauce from the local Greek restaurant over some green beans.
