Oh, crockpot, how have I ever lived without thee?
Background: I was *not* taught to cook growing up. Sort of was, but everyone in my family relies heavily on boxes and cans, so you see the problem. I'm not awful, but not exactly skilled.
But OH! I bought a crockpot this weekend... had them before, but things never got quite done or were just way too tough. This one... oh I love it. Fifteen minutes, taken where I can get it, and we have dinner. Novel concept for me. Now, I want recipes. I may never touch my oven again.

Me again. Here is DH's fav. You can't mess this one up.
Slow Cooker Savory Pot Roast * 1 (can Cream of Mushroom Soup * 1 pouch Dry Onion Soup * 6 small red potatoes, halved * 6 medium carrots, cut into 2-inch pieces * 1 (3 pound) boneless beef bottom round roast or chuck pot roast Stir the soup, onion soup mix, potatoes and carrots in a 4 1/2-quart slow cooker. Add the beef and turn to coat. Cover and cook on LOW for 8 to 9 hours or until the beef is fork-tender. Or on high 4-5 hrs. |

Re: Oh, crockpot, how have I ever lived without thee?
Just made this and it is FABULOUS!
Put olive oil on paper towel, run over interior of pot. Put in 3 cups coarsely chopped fresh green cabbage (about 1/2 med. cabbage), 1/4 cup chopped yellow onion (about 1/4 med. onion), juice from 1 can stewed tomatoes (any flavor), the tomatoes (coarsely chopped), 1 tablespoon sugar or sugar substitute, 1 teaspoon or more chili powder. Stir. Lay 4 servings raw chicken on top. This could be skinned chicken on the bone, cut up chicken breasts, or what have you. Crock for about 6 hours on Low or until chicken is done and cabbage has wilted and soaked up some broth. Add a little chicken broth* if needed to prevent scorching. If you have some good crusty bread, add a generous amount of broth so that the bottoms of the chicken pieces are wet, then mop up the pot liquor with the bread when you serve it. Check before serving and add salt if needed. DH loves this and it's going into rotation. *I made it on the stove with the skins from the chicken pieces, some veggie broth I had in the freezer, and a celery heart. Good enough to drink.
