Lemon juice and canning
I guess it makes sense to buy a bottle of lemon juice for canning? Normally when a few tbsp is require I can get that out of one lemon, but doing a lot of canning it might be economical to buy the bottle? One lemon here in the the summer is 59 cents. So to get a quarter cup, I might need a few lemons!

Most bottled lemon juice has a preservative in it, potassium benzoate iirc. I think there is a brand without, though.

I'm a beginner canner so I certainly don't know all there is to know about canning by any stretch of the imagination; I had read that it is recommended to buy lemon juice in the bottle to use for canning because it had a consistent acidity, unlike using freshly squeezed lemons, making the end product safer.
