yummy vegan Indian dinner
Aloo Phujia. It was totally quick & easy & I had all the ingredients on hand. DH (a carnivore) really liked it & said he wanted it again.
Per some of the comments, I added peas at the end. I used less cayenne since DS would be eating, too. And I used a can of tomatoes (with juice) instead of sacrificing my only 2 fresh tomatoes.
